It depends on several things.

If you have a good raid controller with enough ram then i would suggest
RAID5
Otherwise i would stick with raid 1+0.

I use HP servers with 392MB Raid controllers P600 without any problem in
RAID5 config.
I did a test with same machine and Raid 1+0 (8 SAS disks) and the
performance was slightly better but not enough according to me.
